Superfood Chicken & Veggie Meatballs - Dairy & Gluten Free

Holy cow!! Maybe I should say, holy turkey and chicken... These meatballs are amazing!! To be perfectly honest, I am NOT a meatball, meatloaf, meatroll, meatstick, anything "meat" named...fan. Frankly, the idea of a blob of meat kind of grosses me out. These meatballs however are stuffed with delicious sauteed and highly nutritious veggies. You and your blood sugar are going to love them.

Something very unique about these meatballs is that they are gluten and dairy free. No flour, no bread crumbs, no cheese. My recipes hardly ever (if ever) contain dairy or gluten. I have found that when I limit dairy and gluten, that I have a bit of an easier time managing my weight and controlling my diabetes. Everybody is different though. If you are a die-hard cheese or bread lover, you are more than welcome to make your own version of these veggie loaded meatballs.

If you know me, you know I am obsessed with adding superfoods and hidden veggies in every recipe. I guess, this is a healthy addiction?? But seriously, I can't stop myself. I get so much glee when I bring a entree to a family party and they all love it, and have no idea just how super nutritiously dense it is. These meatballs are the epitome of veggie loaded turkey meatballs. After trial and error, I have found the perfect veggies to add a great flavor and that really make the breakfast chicken sausage taste pop. You're going to want to save this recipe.

Also, know that you can count on all my recipes being diabetic-friendly. Because guess what?? I'm diabetic, and I happen to like to eat what I spent time cooking and creating. Call me crazy.

Enough talking, let's get to the meatball recipe.

Superfood Chicken & Veggie Meatballs

Yield: 44 meatballs

Serving: 11 servings, 4 meatballs per serving

Prep Time: 20 min

Cook Time: 25 min

Total Time: 45 min


  • 16 oz ground turkey (10/90 lean)

  • 16 oz ground chicken sausage

  • 1 cup raw walnuts

  • 3 celery sticks

  • 1 tbsp minced garlic

  • 2 cups white button mushrooms

  • 1/2 red onion

  • 1/2 green pepper

  • ½ cup almond flour

  • 3 egg whites

  • 2 tsps garlic salt

  • 1 tbsp brown mustard

  • 2 cups fresh or raw spinach


1. Set oven to 350 degrees, and toast walnuts as you prepare the meatballs. Keep an eye on them, they should toast until they are a light golden brown.

2. Finely chop celery, mushrooms, and green pepper then throw into a pan to sautee.

3. Grab a large mixing bowl, add turkey, chicken sausage, egg whites, brown mustard, garlic salt.

4. Next remove the walnuts from the oven, let cool for a min, then pulse in blender (see picture below).

5. Chop spinach, add to meat mixture.

6. Add almond flour, pulsed walnuts, garlic salt, sauteed mixture to the meat mixture.

7. Mix meat & veggie mixture.

8. Scoop meatball mixture with #30 scoop, a jumbo cookie scooper, or just scoop 2 tbsps and mold into a ball.

9. Pop onto ungreased baking sheet. Put in oven and set for 20 min or until edges of meatballs are light brown.

10. Once baked, allow meatballs to cool for 2 min, then serve with a side of refreshing cold celery sticks (chop if desired).
